Instant pot shredded chicken will be a new staple for us. The seasonings in this recipe are reminiscent to those in an onion soup mix and add some flavor to the chicken. I do a little bit of meal prep most weeks by fixing a few things ahead of time that we can eat on quite a few meals. For example, I will fix meat in really simple ways and use it all during the week when things are busy. Because let’s face it, if I can cut back on my time in the kitchen then I’m going to. A few weeks ago I bought 3 lbs of chicken breast at Earth Fare. When I got home I realized I was not in the mood to cook the chicken. Naturally, I threw the whole package in the freezer and ordered a pizza.
Yes, I ordered a pizza. And likely you’ve been there too.
Sometimes shopping for healthy groceries just takes it out of you. Especially when this follows a grueling day of work. So yes, I spent all day telling people what to eat and then came home and ordered pizza. (Can I just add in that it was a thin crust pizza.) The problem was I had failed to plan ahead for that night’s dinner. I was starving by the time I got home and too tired to want to fix any of the more time consuming meals I purchased.
If I would’ve had some food already on hand then I know that I wouldn’t have even thought about ordering the pizza. Side note: I don’t think it’s bad to eat pizza occasionally, but it was my failure to plan ahead that led me down that road on a random Monday.

Today, I took this Instant Pot Shredded Chicken in my lunch topped on a salad. Truthfully, “salad” is a generous term for my lunch today. It was some spinach/kale mix thrown in a bowl with this chicken on top. Yep, that was all…2 ingredients. And I forgot to take oil and vinegar so I mixed in some cottage cheese at work. But basically, it was delicious. Seriously. And I’m saying all of this to remind you that eating healthy does not have to be complicated.
The first night we made this we ate it served warm alone with sides. It’s also great stuffed in wraps or burritos. Nutritionally it beats deli meat loaded with preservatives and sodium any day!
