I wanted to bring you another recipe that works perfect for meal prep this week….Spicy Turkey Quinoa Meatballs.
The quinoa in these meatballs replace the traditional oatmeal. In fact, if you don’t have quinoa on hand you can definitely swap out the cooked quinoa for uncooked oats. This is actually how I used to make them. They are delicious and still a perfectly healthy option with oatmeal, but the quinoa is fun and makes them more 2017. And I do want my meatballs trending with this years food trends after all. 😂
The spice in this recipe comes from Frank’s Hot Sauce. I love the simple and short ingredient list on Frank’s hot sauce: Aged Cayenne Red Peppers, Distilled Vinegar, Water, Salt And Garlic Powder. Therefore, it’s the hot sauce we always buy. So many of the other options are loaded with unnecessary ingredients (and sugar)!
These turkey quinoa meatballs pair perfectly with the sweet potato rounds I posted last week.
Typically, I make these meatballs and enjoy them throughout the week on salads that we pack to take to work (alongside the sweet potato rounds.) Casey will either eat them on a salad or by themselves along with some veggies and other side items. Casey (thanks to his past as a picky eater) is my reality checkpoint (and a taste check for you all) with my recipe alterations. He balances me out and give me a level of confidence that my crazy ideas that sound good in my head actually do taste good.
A Note on Meal Prepping
I’m trying to add more recipes that are suitable to meal prepping because I’ve had readers mention they are interested in this! You’ll find some people who are meal prepping down to every meal for the week. If this works for you, then go for it. For us, we find that it works well to meal prep a few things over the weekend to help spread out our cooking during the week. Additionally, we end up with leftovers from our dinners that we cook.
