Southwest Cauliflower Rice Bowl

I’m a firm believer that cooking and cleaning up dinner shouldn’t take all night. Unfortunately, it sure feels like it does at times!  I know that a healthy dinner is most likely to happen if it is as simple as possible. This amazing southwest cauliflower rice bowl has been a staple around our home the past few weeks for this very reason.

Cauliflower Rice = Hidden Veggies

I first spotted cauliflower rice a few years ago at Aldi. I knew it was a dinner game changer and you may remember me talking about it in my post on easy ways to add veggies to dinner.

Now, you can find cauliflower rice pretty much everywhere. While you can make your own cauliflower rice at home with a food processor, I’m finding that using it frozen makes weeknight dinners so much quicker. I think I speak for all of us when I say that EASY and QUICK are key factors in making weeknight dinners happen.

I love one pot dinners! You can literally throw the measuring spoons/cups/etc in the dishwasher while dinner is cooking AND wash the cutting boards by hand quickly. Then after you eat you literally only have to clean up plates and ONE POT (ok, plus a serving spoon.)

It is an amazing thing. And even better is that this one pot dinner has a VEGGIE base. So now, thanks to the convenience of frozen cauliflower rice, we can cook dinner quickly, have minimal clean up, and get in some veggies! Win, win, WIN!

This cauliflower rice bowl also makes a perfect meal to prep ahead for workweek lunches or even busy dinners. In fact, this cauliflower rice bowl is one of the recipes I prepped ahead last week when I knew we would busy moving and the leftovers saved us on busy days when we needed some lunch while we were desperately trying to unpack.

Southwest Cauliflower Rice Bowl

Ingredients

  • 1 Tbsp olive oil extra rigin
  • 1 lb Ground Turkey
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 1/2 Tbsp Chili Powder
  • 1 1/2 tsp Cumin
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 12 oz Cauliflower rice frozen
  • 4 Green onions chopped
  • 1/2 cup Salsa
  • 1/2 can Black Beans
  • 1/2 cup Cheddar cheese
  • 2 cups spinach loosely chopped

Instructions

  • Heat olive oil on medium high. Add ground turkey, breaking it apart as it cooks. Cook until just done.
  • Add salt, pepper, chili powder, cumin, garlic powder, and onion powder, mixing into turkey well.
  • Add in frozen riced cauliflower. Cook until heated through and tender, approximately 4-5 minutes.
  • Add green onions, salsa, and black beans while continuing to cook. Just before removing from heat stir in cheddar cheese until melted and add spinach. Cook until spinach begins to barely wilt.
