And I should mention that by no sugar I mean none…nada…not even honey or maple syrup. Yes, I’m serious. No, these don’t have any coconut sugar either. These muffins are sweetened with dates so they truly are free of sweeteners, but they are still full of FLAVOR.
6 SIMPLE Ingredients = Easy Pumpkin Muffins
Now, let me go ahead and take it one step further. These flourless muffins only have 6 ingredients. Yes, I said SIX and that includes everything. It’s not one of those 5 ingredient recipes with 5 main ingredients PLUS salt, baking soda, and cinnamon. It’s literally 6 ingredients in your food processor.
- Baking Soda
- Pumpkin Pie Spice
And this is totally and COMPLETELY 100% OPTIONAL (and no longer in the sugarless category), but you can top them with DARK CHOCOLATE CHIPS. I usually throw chocolate chips on about half of the batch. Then I just make sure some sans chocolate ones get saved for baby….but honestly, I don’t have to ask my husband twice to save those back. He grabs the chocolate topped ones every time. 😉
Healthy Pumpkin Muffins for Baby
Because they are sugarless, they are a perfect muffin for babies, toddlers, or kids. You guys remember from the Healthy (No Sugar) Smash Cake that I made for Little R, I am waiting a while to serve him sugar-sweetened treats- including honey and maple syrup.
Seriously, he isn’t missing out on anything because he loves these simple pumpkin muffins.
You may notice from the picture that I couldn’t even get my phone ready for a picture quick enough to see him with more than crumbs. Plus, if your little one (or you) have any food allergies they are also gluten free and dairy free.
We have been eating these flourless pumpkin muffins for breakfast the past few days, and since they are made with oats they are basically equivalent to oatmeal with a little pumpkin, egg, and date mixed in. Except they are way more fun. I can’t blame him…I prefer a muffin to a bowl of oats, too.
Flourless Pumpkin Oat Muffins
- 2 cups oats
- 1 1/3 cup pumpkin puree canned
- 2 eggs
- 3/4 cup medjool dates soak in water to soften if needed
- 1 tsp baking soda
- 1 tsp pumpkin pie spice
- optional chocolate chips leave off for baby
Preheat oven to 350°F.
Grease or line a muffin pan.
Mix ingredients in a food processor or high power blender until smooth.
Spoon mixture into the muffin tins. If desired, add chocolate chips to the top.
Bake for 15-20 minutes.
