Instant Pot Shredded Chicken

The fastest shredded chicken ever! Flavored with seasoning that is reminiscent of onion soup mix.

Ingredients

  • 3 lb Chicken
  • 1 cup Chicken Broth organic
  • 1/4 cup Minced Onion
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Dried Parsley
  • 1 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • Pour 1 cup of chicken broth into instant pot. Add in chicken and all seasonings.
  • Plug in your Instant Pot and turn poultry setting on. Increase time (using the + button) to read 20 minutes. The cooking process will start automatically after you finish setting the time.
  • Leave on warm up mode and let it depressurize naturally.
  • Once the valve is loose, carefully remove lid. Pull chicken out of Instant Pot.
  • Pull the chicken out of the Instant Pot leaving behind juices and shred using a hand mixer (easiest method) or using 2 forks.
  • After shredded you can mix in some the broth/juice left in the Instant Pot to add some moisture if you like.

Notes

My favorite way to use this chicken is to add it to a salad. Casey and I will use it in our lunch this way most frequently. Occasionally we will eat the chicken plain with sides such as sweet potato rounds and broccoli. Some other ideas include creating sandwiches, wraps, or even stuffing it into a baked potato. It's definitely healthier than eating deli meat all week and helps ensure you have a healthy protein source on hand for the week.
